Gandinaia

Production area
Val Tidone: steep slope vineyard on the top of a hill facing the south-east; clay/limestone/marly soils.

Vine varieties
Blend composed mostly of Syrah grapes and, to a lesser extent, typical varieties of the area. The vine training system is the spurred cordon with about 5000 stocks per hectare and a production of 1000 grams of grapes per vine stock at high quality levels.

Grape harvest
Only when optimal phenolic and technological maturation is reached. Most of the Syrah grapes, collected in small boxes, are softly de-stemmed, while about 30-40% of them is left in form of whole grapes. Some of the grapes wither under controlled conditions and the vinification is carried out separately afterwards.

Yield
The production is limited to 30/40 hl per hectare with appropriate agronomic interventions and, if necessary, a manual thinning of the bunches.

Winemaking
The wines are fermented in stainless steel containers with a temperature ranging between 26 and 30° C. Fermentation is followed by a skin maceration period of two weeks. Once maceration is completed, part of the wine (about 30/40%) is poured into French oak barriques, where malolactic fermentation takes place. Here, the wine is periodically stirred (bâtonnage), thus remaining in contact with its noble lees.

Colour
Deep ruby red with light garnet reflections.

Aroma
Fruity aroma of slightly dried black berries (Marasca cherry, elderberry, blueberry and black currant), with a pleasant hint of mountain strawberry compote; floral scents (carnation, violet, dried red rose) with spicy notes of aromatic blonde tobacco, liquorice and a slightly balsamic hint of pepper mixture; light vanilla-woody aroma delightfully balanced and pleasant.

Flavour
Excellent structure; elegant and harmonious with a good balance between alcohol perception, smoothness and acidity; great pleasantness and roundness; dense, smooth and well-blended tannins. Aftertaste: hints of black fruits and blond tobacco with a long finish rich in vanilla and spicy notes. Perfect with first courses of the Emilian cuisine (lasagna, tortellini, cannelloni), game (salmis), red meat (excellent with grilled and braised meat) and hard or semi-hard cheese.
